1-2-3 Mug, 2 Ingredient Blueberry, Dr. Pepper, and Rainbow Cake

1-2-3 Microwave Mug Cake

While it’s not like a homemade cake fresh from the oven, there are just three simple steps to this easy-to-make mug cake.

Mix two boxes of cake mix together. One can be any flavor you prefer, but the other MUST be Angel Food. Store the mixture in an airtight container.
  • When you want some cake simply place 3 tablespoons of the cake mixture in a large coffee cup.
  • Stir in 2 tablespoons of water.
  • Microwave for 1 minute and you will have a single serving of cake to enjoy!

2 Ingredient Blueberry Angel Food Cake

This blueberry angel food cake dessert is heavenly! With just two ingredients it’s so simple to prepare. The perfect easy-to-make dessert or treat anytime you want something sweet!

1 box Angel Food Cake Mix
1 20-22 ounce can of Blueberry Pie Filling
  • Mix the cake mix and pie filling together.
  • Pour into an ungreased 9×13 pan.
  • Bake for 28 – 30 minutes at 350°F.

Dr. Pepper Cake

Always a favorite dessert, this Dr. Pepper Cake is a sweet, easy-to-make cake recipe with a poured glaze on top! When made with chocolate cake mix and pudding, the soda intensifies the rich flavor of the chocolate.

CAKE INGREDIENTS:
  • 1 box chocolate cake mix
  • 1 box chocolate pudding
  • 4 eggs
  • 3/4 cup oil or butter
  • 12 ounce can of warm (room temperature) Dr. Pepper (save about three tablespoons for the icing)
  • 3/4 cup chopped walnuts (optional)

For a less chocolatey Dr. Pepper Cake like the one in the picture below. Use your favorite vanilla cake mix and pudding. For a more chocolatey cake add a teaspoon of vanilla and 4 tablespoons of cocoa powder to the recipe.

DR PEPPER GLAZE: Mix 1 cup powdered sugar, 1 teaspoon vanilla, and enough Dr. Pepper to make a thin glaze.

DIRECTIONS:
  • Preheat oven to 350°F and grease a bundt pan.
  • In a large bowl, combine dry ingredients
  • Add wet ingredients except for Dr Pepper. Add the eggs 1 at a time, beating well after each addition.
  • Stir in walnuts.
  • Gradually beat in Dr Pepper.
  • Pour into the bundt pan.
  • Bake for 1 hour.
  • Remove cake from oven and cool.
  • When cake is cooled pour glaze over the top.
  • Cut and Serve.

Easy-To-Make Rainbow Cake

This rainbow cake is surprisingly easy to create. And, everyone will have lots of smiles as they watch you cut into this masterpiece.

INGREDIENTS:
• One boxed white cake mix plus eggs, water, and oil to make it according to the box.
• Icing colors in Purple, Blue, Green, Red, Orange, and Yellow.

DIRECTIONS:
• Preheat oven to 350°F degrees.
• Make cake mix according to box
• Grease a 10-inch springform pan or 2- 9 inch cake pans. Place a circle of parchment paper in the bottom of your pan/pans.
• Evenly divide batter into 6 bowls (about 1 cup of batter in each)
• Tint each bowl of batter a different color using gel colors.
• Pour 1 of the colored batters in the center of the springform pan. Next, pour the second color into the center of the first color. Continue doing this with each color. As you pour the next color it will push the previous color out toward the side of the pan.
• If you are using 2 pans, pour 1/2 of each color into each pan.
• Bake at 350 according to package directions.
• Remove from oven and cool for 15 minutes. Turn out onto a wire cake rack to finish cooling.

Cool for at least two hours before decorating with your favorite frosting and fondant. Or, you can use this yummy cream cheese one and some fun sprinkles.

INGREDIENTS:
• 1/2 cup of cream cheese, softened at room temperature
• 1 tablespoon of unsalted butter, softened at room temperature
• 1/2 teaspoon of vanilla extract
• 1 and 1/2 cups of powdered sugar, sifted
• up to 2 teaspoons of milk

DIRECTIONS:
• Beat together the softened butter and cream cheese until they’re incorporated and creamy.
• Mix in the vanilla extract.
• Add in the powdered sugar, half a cup at a time.
• Add in the milk until you achieve the desired consistency.

Do a crumb layer. Not sure how to do one? Wilton has a post that will tell you everything you need to know about crumb coating a cake.

Coat a second time, and put any toppings that you desire, such as rainbow sprinkles, colored sugar, or any tiny candies you like.

About Paula

The children are all grown and have started giving us grandchildren that we can dote on. For years it was just the three of us at home – my sweetheart, our spoiled cat, and me. However, we recently adopted a bobtail kitten. So the four of us are living in chaos. Who knew such a tiny creature could disrupt an entire household! ? Over five years ago, while I was looking for freebies and sweeps to do, I decided to start blogging about the great ones I found. When the opportunity presented itself, I began writing reviews. I found I truly enjoyed writing these posts and have dedicated a large amount of time to them.

Yum! All of these recipes are so fun and unique! I have done a rainbow cake for my daughter before, but it was with a box mix. I can’t wait to try the blueberry! Thanks for sharing. 🙂
