One Skillet Sausage and Rice

We love one-pan meals, especially well-balanced ones, and this sausage and rice dish delivers. It’s perfect for a busy weeknight and reheats well for lunch the next day. You’ll have dinner on the table in no time with this quick and easy recipe.

  • 1 tube ground sausage
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 julienned carrot
  • 1/2 cup frozen peas
  • 1 (10.75-ounce) can cream of chicken soup
  • 1 (14 oz can) chicken broth
  • 1 cup white rice
  1. In a large skillet, combine sausage, onion, carrot, and celery; cook over medium-high heat until sausage is browned and crumbles. Drain well.
  2. Mix soup and broth together in a bowl
  3. Add peas, soup, broth, and rice to the skillet and stir. Bring to a boil.
  4. Reduce heat. Cover and simmer 20 – 30 minutes. Until rice is done.

Recipe Variations and Suggestions: Use Cream of Celery soup, Smoked or Ground Turkey Sausage. We’ve also used ground turkey and some Legg’s sausage seasoning to make this dish. Add, 1/2 cup diced bell pepper along with the onion and celery. Top with shredded cheese before serving.
