At $3.79 each, taking a family out for one of these sandwiches can wreck your weekly budget. Not wanting to give up enjoying these delicious sandwiches I set out to find out how to make them at home. Thanks to the Copycat Chick-Fil-A Chicken Sandwich recipe below and stocking up on boneless chicken breasts when they are on sale for $1.99 per pound, we can make eight sandwiches for less than $10!

It feels great to feed the entire family without emptying our pockets of all their cash. And, this chicken sandwich gets its flavor from a yummy pickle brine just like the one at our favorite fast-food restaurant.

Copycat Chick-Fil-A Chicken Sandwich

Ingredients

  • 1 8-ounce boneless, skinless chicken breast
  • ½ cup dill pickle juice
  • ¾ cup milk
  • 1 cup vegetable oil for frying
  • 1 egg
  • ¼ cup flour
  • 1 teaspoon powdered sugar
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 2 hamburger buns, toasted
  • 6 dill pickle slices
  • 1 teaspoon of Tabasco sauce for a spicy sandwich

Directions

  • Place a chicken breast on a cutting board. With your hand flat on top of it, carefully slice the chicken in half horizontally to make 4 thin cutlets. So that the breasts cook more evenly, pound them out so that the breasts are of equal thicknesses. I do this by placing the cutlets between 2 pieces of heavy-duty plastic wrap and pounding with a mallet (or heavy skillet) until they are ¼-inch thick.
  • In a large resealable plastic bag, combine chicken, pickle juice, and ¼ cup milk (add a teaspoon of Tabasco sauce for a spicy sandwich). Chill for at least 30 minutes.
  • In a large skillet preheat oil to 350° F.
  • Meanwhile, in a shallow dish combine remaining ½ cup milk and egg. In another shallow dish combine flour, powdered sugar, salt, and pepper.
  • Drain chicken. Dip chicken in egg mixture, allowing excess to drip off. Dip in flour mixture to coat. For extra thick crispy crust REPEAT this step with each piece.
  • Add chicken to hot oil and fry 4 to 8 minutes or until golden brown and internal temperature reaches 165° F, turning once. Transfer to a paper towel-lined plate.
  • Place chicken on a bun and top with pickles, and top bun. Serve with waffle fries, if desired.

You can even buy straight pickle juice by the gallon—absolutely no pesky pickles included.

For baked version: Substitute Panko bread crumbs for the flour and coat as directed. Bake at 375° F for 10-15 minutes until cooked through.

For air fryer version: Add 2 Tablespoons Potato Starch to the flour mixture and coat as directed. Grease basket/pan of air fryer well. Place the chicken in air fryer and spray the chicken with oil. Cook at 340° F for 6 minutes. Flip the chicken and spray with oil. Cook for 6 more minutes. Increase the temperature to 400° F and cook for two minutes on each side.

Nuggets: Cut breast into ¾-inch pieces and coat as directed. Cook at 365° F for 4 – 6 minutes turning once.

Copycat Chick-Fil-A Dipping Sauce

Did you know that Chick-fil-A Sauce is a magical blend of Honey Mustard, Barbecue and Ranch Sauces? Mixing up some to add to your sandwiches is easy!

  • 1/2 C Mayonnaise
  • 1/4 C Honey
  • 3 TBSP Yellow Mustard
  • 1 TBSP Dijon Mustard
  • 1 TBSP Lemon Juice
  • 1/4 C Smokey BBQ Sauce

Whisk all ingredients together and ENJOY.

Tips:

If you find that your dipping sauce isn’t as smokey as the real sauce, add a drop or two of liquid smoke.

You can also make with just 2 ingredients, Ken’s Honey Mustard Dipping Sauce and any brand of honey barbecue sauce. Our favorite is Sweet Baby Ray’s honey bbq sauce.

Stubb’s Legendary Bar-B-Q Sauce Is Lip Smackin’ Good!

Most sauces include some variation on vinegar, tomato paste, or mayonnaise as its base, as well as liquid smoke, onion powder, spices such as mustard and black pepper, and a sweetener such as sugar or molasses. It is the combination and unique blend of all these ingredients that make Stubb’s legendary.

I recently had the pleasure of trying several of the products that Stubb’s offers. When I look for a sauce for finishing my grilled, baked, or slow-cooked meat I want one with a bit of sweetness, but not too much,  a fair amount of smoke, but not so much that I feel like my dinner has fallen in the campfire, a nice blend of spices, and a good amount of tang. It’s hard to find a sauce with the perfect balance of all these elements. It seems that I often find a sauce that has the right amount of most ingredients but misses the mark in one of these areas and that one ingredient overpowers the sauce.

Being from an area in South Carolina were mustard and vinegar based sauces are popular I had never had the opportunity to try Stubb’s. They are hard to find here as I soon discovered when I went looking for it last week. I did find that Walmart carried on of their bottled sauces so I was thrilled to know that we could get it. After all, it’s grilling season here year round so I’m going to need lots of Stubb’s. Yes, with the perfect blend of spices, hint of vinegar, slightly smokey flavor, and mild sweetness Stubb’s Bar-B-Q Sauce has replaced my SBR as my favorite.

#DIY Homemade Ginger Teriyaki Chicken #Recipe

Ginger Teriyaki Chicken

Flavor-packed, simple, quick and delicious!

INGREDIENTS:

  • 1⁄2 cup teriyaki sauce
  • 1 (8-ounce) can pineapple chunks in juice, undrained
  • 1/4 teaspoon Ginger Root Powder
  • 3 garlic cloves, finely chopped
  • 1⁄4 cup green onion, chopped
  • 2 tablespoons oil, divided
  • 1 (14 ounce) package frozen Asian-style vegetables
  • 1 lb chicken thigh, boneless and skinless, cut into 2 x 1/2-inch slices
  • 1 (14-ounce) can bean sprouts, drained
  • 1 (8-ounce) can sliced water chestnuts, drained

DIRECTIONS:

  1. Stir together teriyaki sauce, pineapple with juice, ginger, garlic and green onion in a small saucepan.
  2. Heat to a boil; reduce heat and simmer 5 minutes.
  3. Heat 1 tablespoon of the oil in large skillet or wok over high heat.
  4. Cook and stir vegetables about 4 minutes or until crisp-tender.
  5. Remove from skillet; set aside.
  6. Pour the remaining 1 tablespoon oil in the skillet.
  7. Cook and stir chicken about 4 minutes or until no longer pink.
  8. Add cooked vegetables back to skillet.
  9. Stir in bean sprouts, water chestnuts, and prepared sauce; heat through.
  10. Serve over rice or noodles.

NOTE: I made this the other night substituting the frozen vegetables with some fresh broccoli, carrots, onion, zucchini, and yellow squash that I had in the refrigerator. I just cut them into bite-size pieces and cooked until they were tender but still firm like we like them.

Ceylon Ground (Curcumin) Tumeric Root Powder

Turmeric is an old Indian spice with a peppery, warm and bitter flavor and a mild fragrance slightly reminiscent of orange and ginger.It contains a powerful medicinal compound called Curcumin and has long been used as a powerful anti-inflammatory in both the Chinese and Indian medicine.

To get the health benefits that this spice offers I like to add it to many of my dishes. Some of my favorites are gravy, rice, fried chicken, and stir-fry. I also add it to both my store bought and homemade pickles. I loved the nice peppery taste that this turmeric offered and would recommend adding it to any dish that you want to have or don’t mind having a yellow tint.

Homemade Bread and Butter Pickles

Perfect for topping your favorite burgers, adding to salads, or eating right out the jar.

INGREDIENTS:

  • 25 cucumbers, thinly sliced
  • 6 onions, thinly sliced
  • 3 cloves garlic, chopped
  • 1/2 cup pickling salt or Kosher salt (regular table salt has additives in it that will turn the pickles dark and muddy the color of the pickle juice)

 

  • 3 cups cider vinegar
  • 5 cups white sugar
  • 2 tablespoons mustard seed
  • 1 1/2 teaspoons celery seed
  • 1/2 teaspoon whole cloves
  • 1 tablespoon ground turmeric

DIRECTIONS:

  1. In a large bowl, mix together cucumbers, onions, garlic, and salt.  Leave enough room to cover the bowl with a thin towel (not the fuzzy kind) and add an inch or two of ice on top of the towel. Allow to stand approximately 3 – 4 hours.
  2. In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves, and turmeric. Bring to a boil.
  3. Drain liquid from the cucumber mixture and rinse. I rinse mine 3 times.
  4. Add the cucumbers to the liquid in the saucepan. Bring to a boil again.
  5. Transfer cucumbers to sterile containers. Top with liquid leaving 1/2 inch headspace. Seal and chill in the refrigerator until serving or PROCESS in boiling water canner for 15 minutes.
  6. For best flavor, allow pickles to stand for 4-6 weeks.

I did a small batch Saturday without onions to use up some leftover cucumbers from my parents anniversary party.

Organic Herb Powdered Ground Ceylon Cinnamon

Cinnamon is used to help treat muscle spasms, vomiting, diarrhea, infections, the common cold, loss of appetite, and erectile dysfunction (ED).It may even lower blood sugar in people with type 1 or type 2 diabetes.

With the baking season fast approaching it was time to make my favorite go-to spices. For me, it’s both apple and pumpkin pie spice. I use them in more than just my pies since they add great flavor to eggnog, sweet potatoes, baked apples, cobblers, and more. This was my first time trying Ceylon Cinnamon and I really enjoyed the intensely sweet flavor that this cinnamon offers. Even my boyfriend was able to notice a difference when I put some on his sweet potato the other night. INGREDIENTS

  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon allspice
  • 1⁄2 teaspoon ground cloves
  • 1 dash cardamom (optional)

DIRECTIONS

  1. Place all ingredients in a small, sealable container and mix together. Use as directed in recipes that call for apple pie spice.
  2. Store in a dry place, up to 6 months.

Homemade Pumpkin Pie Spice

Making your own spice mix is simple and very economical. Use this mixture in all your recipes that call for pumpkin pie spice. 

INGREDIENTS

  • 3 tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons ground nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons ground cloves

DIRECTIONS

  1. Place all ingredients in a small, sealable container and mix together. Use as directed in recipes that call for pumpkin pie spice.

Homemade Cinnamon Butter

This butter is perfect for pancakes, toast, bread, rolls, biscuits, sweet potatoes, carrots, and so much more.

INGREDIENTS

  • 1⁄2 cup sweet cream butter (softened, salted)
  • 1⁄3 cup confectioners’ sugar
  • 1 teaspoon ground cinnamon

DIRECTIONS

  1. In a small bowl, with a hand mixer, beat butter till fluffy.
  2. Add confectioner’s sugar a little at a time, blending well.
  3. Add cinnamon to the mixture and blend well.
  4. Scoop into a small container-serve immediately or refrigerate.
  5. Variation: For a butter more like Texas Roadhouse’s, add 1/4 cup liquid honey and mix well before adding the sugar.

#DIY Easy Homemade Blue Ribbon Chili #Recipe

Easy Homemade Blue Ribbon Chili

Nothing says comfort food more than a great bowl of award-winning chili.

INGREDIENTS

  • 1 pound fresh ground beef
  • 1 (46- ounce) can tomato juice
  • 1 (15-ounce) can red kidney or pinto beans, drained
  • 1 medium-large onion, chopped
  • 1 (6 – 8 ounce) can or jar sliced mushrooms, drained
  • 1/8 – 1/4 cup chili powder (use less for milder chili)
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper (use less for milder chili)

DIRECTIONS

  1. In a large skillet, brown the ground beef and onions
  2. Drain off the fat
  3. Put the beef mixture and the remaining ingredients in a 6-quart pot
  4. Cover the pot and let the chili simmer for 1 to 1 1/2 hours, stirring every 15 minutes. You can also cook in a slow cooker on low for 3 to 4 hours.

I like to top mine with a bit of green onion and shredded cheese.

My Thoughts:
I make several different fig preserves and jams every year from the fig trees at my Mom’s house so I was thrilled when I received all four of Orchard Choice’s delicious fig spreads (Organic Mission, Balsamic Pepper, California Orange, and Port Wine) and a bag of Blue Ribbon Orchard Choice Mission Figlets to try. I never considered making these unique flavors and must say they are great. I substituted the Balsamic Pepper Fig Spread for Barbecue Sauce and made a new chicken dish that was unlike anything I had ever had the pleasure of eating. In the morning I used the Port Wine Fig Spread on toast for breakfast and it was delicious. I would recommend these to any fig lover. I plan on using the figlets to make fig bars for Christmas. Ingredients:
Chicken Pieces
Balsamic Pepper Fig Spread
Chicken Broth
 
Directions:
1) Place Chicken pieces into saucepan skin side down.
2) Mix equal parts Chicken Broth and Balsamic Pepper Fig Spread
3) Then pour sauce over chicken in pan and cover.
4) Cook over medium heat for 30 minutes. Turn and cook for 15 minutes or until done.
5) Remove chicken and reduce juices until thick and pour over chicken.

I served my chicken with rice and broccoli. The next day I diced the leftover piece and made chicken fried rice for lunch. Yummm!!!!

Crispy Roasted Chicken Recipe and Coriander Seeds Review

What is Coriander?

Coriander is one of the oldest of herbs and spices. The fruit of the coriander plant contains two seeds which, when dried, are the portions used as the dried spice. When ripe, the seeds are yellowish-brown or tan in color with longitudinal ridges.

Coriander seed has a warm and subtle flavor with a slight citrus hint. It has an aromatic scent that is soothingly warm, nutty, slightly fruity, and complex.

Why You Should Consume Coriander?

  • Busts intestinal gas and stimulates the appetite. 
  • Can be used for making a medicinal tea to soothe an upset stomach, to treat indigestion, and mild gastrointestinal upsets.
  • Sugar-coated coriander seeds are used as a breath freshener in India. 
  • Known to lower blood sugar by stimulating the secretion of insulin. 
  • Helps the heart by lowering bad cholesterol and raising good cholesterol. 
  • Anti-inflammatory properties are used in treating arthritis. Boil ground coriander seeds with water and drink the concoction. 
  • Can also be used to treat bacterial and fungal infections.

  • Saute coriander seeds with spinach and garlic. Mix in garbanzo beans and season with ginger and cumin.

Crispy Roasted Chicken

Ingredients:

  • 1 teaspoon kosher salt
  • 1/2 teaspoon caraway seeds
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon fennel seeds
  • 1/4 teaspoon coriander seeds
  • 1/4 teaspoon dried rosemary

 

  • 2 tablespoons paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons all-purpose flour
  • 1 teaspoon onion powder
  • 5 tablespoons vegetable oil
  • 1 (4 pound) broiler-fryer chicken, cut in half lengthwise

Directions:

  1. Preheat oven to 425° F.
  2. In a spice grinder or mortar, combine kosher salt, caraway seeds, sage, fennel, coriander, and rosemary. Grind to a coarse powder. Transfer spice mixture to a bowl and stir in paprika, garlic powder, flour, and onion powder; mix in vegetable oil to make a smooth paste.
  3. Pat chicken halves dry with paper towels and tuck wing tips up behind the back. Brush spice paste onto chicken halves, coating both sides, taking care to season under wings and legs.
  4. Place chicken halves in a baking dish or roasting pan with skin sides up, leaving space around the chicken so halves aren’t touching.
  5. Roast in a preheated oven until a thermometer inserted in a thigh reads 165° F, about 1 hour. 
  6. Remove from oven and let rest for 10 minutes before slicing.

My Thoughts: This great company works with organic farms so that the products they offer do not have the toxins that so much of our food does. So when I received the opportunity to review the coriander seeds that they offer I was thrilled. I compared prices and to get the same amount of seeds in the national brand that my grocery store carries it would cost almost twice what these cost and they are not the same high quality that you receive from Jiva Organics. I am very satisfied with what I received and would highly recommend their products.
