Coconut Quinoa Porridge with Camu Chia Berry Compote
The addition of a compote infused with Camu Camu to the porridge makes this a filling breakfast that will last well until lunch. Adding some diced goldenberries would add a nice vitamin boost, too.
Coconut Quinoa Porridge
Ingredients
1 cup gluten-free oats
1/2 cup quinoa
6 cups coconut water
1 Tbsp Coconut Sugar
1/2 tsp Cinnamon
1/2 tsp vanilla powder
Pinch of Salt
Directions
– Add all ingredients into a saucepan.
– Bring to the boil. Then, allow to simmer for 10-15 minutes, stirring frequently. It’s ready when the porridge is smooth and you can see the quinoa grains starting to open up.
– Serve with Camu Chia Berry Compote (recipe below), spiced almond & coconut flakes (recipe below) and a sprinkling of goji berries to top it all off.
Camu Chia Berry Compote
Ingredients
3 Cups Mixed Berries such as strawberries, raspberries, blueberries and blackberries
3 Tbsp Chia seeds
1 Tbsp liquid raw honey
1 tsp Camu Camu powder
Directions
– Cook berries and chia seeds in a saucepan over a medium heat until a jam-like consistency is achieved.
– Remove from heat and let cool.
– Mix in raw honey and Camu Camu powder.
– Serve over Coconut Quinoa Porridge.
Spiced Almond & Coconut Flakes
Ingredients
4 Tbsps Almond flakes (aka. sliced almonds)
4 Tbsps Dried Unsweetened Flaked Coconut
1 tsp cinnamon
Directions
– Add all ingredients to a non-stick pan and dry roast until fragrant.
– Serve over Coconut Quinoa Porridge and Camu Chia Berry Compote.
